What You Need,...
- 3 mashed bananas (the more ripe the better!)
- 1 cup Vanilla Almond milk
- 2 eggs
- 1 tablespoon Baking powder
- 3 cups Rolled Oats
- 1 teaspoon Vanilla Extract
- Mini Chocolate chips or Goji Berries or whatever you want to use.
What to Do,...
Turn your oven on to 375 degrees.
Mash up 3 Bananas in a bowl.
After you've mashed the Bananas, add the following ingredients into the same bowl with the Bananas and mix well.
- 1 cup Vanilla Almond Milk
- 2 eggs
- 1 tbsp Baking power
- 1 tsp Vanilla Extract
Now mix it in with your oats and let the mixture sit for about 10 minutes or so. This is when you add whatever else you want to put in.
I divided my mixture between 3 bowls and put Goji Berries in one, chocolate chips in the 2nd and didn't add anything to the last bowl.
Use your own discretion on how many chocolate chips or berries you add in but don't go overboard.
Spray a muffin pan and/or liners with with non-stick spray.
This recipe made 16 cups and you can see the three different types I made. (Goji, Chocolate, Plain)
Not sure which is my favorite, it's a toss up between the Goji and Chocolate Chip. Not a big fan of the plain ones and will be adding something to all that I make in the future.
I think sliced up Cranberry would work well.
Bake for about 25 minutes or until you see the edges starting to brown.
As you can see, the cookie can below only contains 7 of them because I ate most of them the first night.
