I'm a big believer in having a good filling breakfast each day. Recently I've been eating this Quinoa Porridge every morning and it fills me up like no other breakfast does.
So my doctor tells me that my cholesterol is way too high. OK, I can accept that. But what was that 2nd sentence? Did you say I need to give up my good friend "Maple Bacon" and up my daily intake of fruits and veggies? Sigh. A quick look at the Canada Food Guide says a person needs 5 to 7 servings a day of fruits and vegetables. 5 to 7 servings!!! Is that even possible? Well I found it is possible but it helps if you start with one of these each morning,..4 servings all in one blast. And don't let the Spinach scare you off, I guarantee all you can taste is banana, strawberry and blueberry. I'm hooked on them and you should be too!
On the weekends I make breakfast a lot and I've found that pancakes with fruit is always a popular choice. This week I had frozen Strawberries and a Banana on hand. This recipe makes 12 normal size pancakes plus 1 extra giant size pancake for me.
